Do I need to build the Slack app myself?

Yes. You create the Slack app in your own workspace and install it, so the token stays with you. BotFerry hands you the manifest and walks you through every field.

Does BotFerry ever store my Slack token?

You own the app and can revoke its token in Slack whenever you want. BotFerry keeps the token encrypted and uses it only to move messages between channels.

Which channels does BotFerry listen to?

Only the channels your Slack app has joined. Add the app to a channel to relay its mentions, or remove it to stop. Replies always go to the one operator channel you pick.

Can the original requester tell an operator is replying?

No. Replies post back to the thread as your app, under its name rather than the operator name. Your team answers from a separate channel the requester cannot see.
